Pasta machine is a must!! Dough never did rise. Ravioli were still not edible after boiling. Far too much work for a meal that should have been easy to make.

While a pasta roller can help roll the dough more quickly, it's not necessary. After kneading, the dough will need to rest for 30 mins, not rise. During this time the water will be absorbed by the flour and the gluten strands will relax, giving a strong, pliable, roll-able dough.

As a parent of adult children, it can be a bit more challenging as far as gift-giving goes. BOTH my kids LOVED this kit! I look forward to eating the finished product--at both their homes! LOL

Do you need to have a pasta roller to make the dough?

While a pasta roller would certainly help (and make things a whole lot faster) the kit is designed to be used with either a hand crank roller or a rolling pin and a little elbow grease! When rolling to about 1/16th of an inch thin by hand, we recommend rolling out smaller pieces at a time.

The ingredients included in the kit are vegan, but a few additional ingredients are needed to complete the recipe. Traditionally, ravioli dough is made with eggs, but a vegetable oil (such as olive) can be substituted for the eggs. We would recommend searching online for some vegan-friendly recipes and including a few with the gift to your mother-in-law. There are plenty of them on the web - we just looked!
