Fond memories of eating at Buddhist temples and family meals of simple ingredients inspired Mimi Nguyen's vegan pho kits. Growing up in war-torn Vietnam, Mimi had her first taste of American food in a Guam refugee camp on her way to the United States, and wondered what food said about a culture and its people. Using common, whole ingredients, she shows that a beautiful dish doesn’t have to be complex or tedious. “It’s warm and comforting to gather around the dinner table with a bowl of pho," she says.
