Some people just don't need more "stuff" as is the case with the 82 year-old person I purchased this for. I love gifting experiences and this one was perfect for the recipient. He's Italian and will be doing this with a life long friend - avperfect way to spend quality time together. Instructors include all the items you need to purchase in addition to the kit so the recipient will need to be prepared for the class.

The only thing I made was a mess
I have made a lot of things over the years, and all I made with this cheese making kit was a colossal mess. All I have to show for my 2 hours of work is a stack of dishes drying in the sink rack. It's ironic that the brand is called "Mad Millie," and the only one mad is me. I tried making the mozzarella cheese, everything was going fine until the 7th or 8th step. The directions don't work beyond this point. The directions say that the water should be 158 degrees. I had it at 158 degrees, and that temperature was not hot enough for the curd to melt and the cheese to stretch. It needed to be 180+ degrees. The directions suggest wearing rubber gloves. I got my hands burned through the gloves, and the heat was so bad that three of my false nails actually came off. The directions also say that you should prepare a salt solution to soak the finished cheese in, but it's not clear whether you should use the artisan salt that came with the kit or if you should use your own salt. The salt measurement given in the instructions is in grams or ounces, not in cups or tablespoons. Would be nice if they also used the imperial system in addition to metrics. I had to calculate a few times on my phone what the correct measurement would be; I determined that the required 250 grams was 1 cup of salt, which would be more than half the bag included in the kit. The kit says that includes enough items to make 10 batches of cheese, but if more than half the bag is used in 1 batch, I'm left to think that you should use your own salt and the bag of artisan salt included can be added separately to enhance taste. My cheese fell apart, as did my patience. I threw everything away and I'll never use this stuff again. I think that Mad Millie should refund me for the milk I wasted in this awful endeavor. Worst experience ever!!

These recipes require full fat milk as well as cream. Lactose free milk would not be recommended. The process of cheese making is based on bacterial cultures converting the lactose in milk to lactic acid.
